This fluffy flavourful bread is made on the stovestop instead of oven baked.
Makes 2 medium loaves

Cooking Time, including resting: about 2 hours total
Ingredients:
1 tablespoon dry yeast
375g/3 cups bread flour (you can also use all purpose flour)
400ml/1¾ cups warm water
384g/2 cups fine semolina flour + extra for dusting
120g/1 cup whole wheat flour
2 tablespoons sugar
2 teaspoons salt
3 tablespoons olive oil
Preparation:
In a little warm water – between 105-115°F – mix 1 teaspoon of sugar and yeast and set aside to bloom or proof (testing if your yeast is active) about 5-7 minutes
In a bowl, mix the remaining sugar, salt and flours. Then, add the water, olive oil and yeast mixture. Either use your hands or a stand mixer to knead the dough and form a soft ball.
Divide the dough into balls, the size of a ping-pong balls.
Arrange them on a floured board or baking sheet, about 2½ cm apart, and cover with plastic wrap or a kitchen towel and leave to rest about 15 minutes.
After the dough has rested, dust your work surface with flour and gently flatten each ball with your hands to about 0.3cm thick. Cover with plastic wrap or a kitchen towel and let rise in a warm dark place for 1 hour.
Preheat a frying pan or griddle over medium-high heat until very hot.
Place the bread in the pan (do not overcrowd the pan) and turn as soon after 10-15 seconds. Turn and continue cooking while turning a few times until they have puffed up and golden brown. When done, transfer to a cooling rack and leave to cool for a few minutes before serving.
TIP: This tasty puffy bread is similar to Pita bread and an excellent accompaniment to grilled meats. Make a batch and freeze, they are simply delicious!
