Steamed Clams (Diabetes-Friendly)

This light and flavorful dish is perfect for those managing Type 2 diabetes—high in protein, low in carbs, and rich in healthy fats. Serve with a side of sautéed greens or a small portion of quinoa for a balanced meal.

Serves: 2-3

Prep Time: 10 minutes (includes cleaning and soaking the clams)

Cook Time: 10 minutes

Ingredients:

🦪 1 lb fresh clams, cleaned and soaked in cold salted water for 20 minutes

🧄 4 cloves garlic, minced

🫒 2 tbsp extra virgin olive oil

🍋 Juice of 1 lemon

🥂 ½ cup low-sodium fish broth or dry white wine

🌿 ½ tsp red pepper flakes (optional for a kick)

🧂 Freshly ground black pepper, to taste

🌿 2 tbsp fresh parsley, chopped

Preparation:

1️⃣ Rinse and scrub them under cold water after soaking. Discard any that remain open after tapping.

2️⃣ Heat olive oil in a large pan over medium heat. Add garlic and red pepper flakes, stirring for about 1 minute until fragrant.

3️⃣ Steam the clams: Add the clams and pour in the broth (or white wine). Cover the pan and let them steam for about 5-7 minutes, shaking the pan occasionally.

4️⃣ Check for doneness: Once the clams open, they’re ready! Discard any that stay closed.

5️⃣ Finish with lemon & herbs: Squeeze fresh lemon juice over the clams and sprinkle with chopped parsley. Serve immediately.

Diabetes-Friendly Tips:

✅ Use olive oil instead of butter for heart-healthy fats.

✅ Skip white bread and serve with a fiber-rich side like quinoa or steamed veggies.

✅ Go easy on added salt—the natural brininess of clams is flavorful enough!

This dish is light, fresh, and packed with essential nutrients to keep blood sugar stable while satisfying your seafood cravings.
