There’s something special about a laid-back dinner with friends—good conversation, a glass of wine, and a meal that feels effortless yet impressive. That’s exactly why this Sheet Pan Salmon Dinner has become one of my often go-to recipes when I have people over.


I remember the first time I made this dish for a small gathering. I wanted something delicious but I didn’t want to be tied to the stove like I was during my long days running my restaurant kitchen. So, I toss everything onto a baking sheet, drizzle a simple yet flavorful sauce, and let the oven do the work. The result? Perfectly tender salmon, beautifully roasted veggies, and a meal that looked as good as it tasted—all with minimal effort.

Ingredients:

  • 4 salmon fillets or 1 large filet as1shown on the picture

  • 500g/1 lb baby potatoes, halved

  • 1 cup cherry tomatoes

  • 1 small red onion, sliced

  • 2 tbsp olive oil

  • Salt & pepper to taste


📌 Ingredient Additions & Serving Suggestions:

  • For extra flavor, add a few thinly sliced lemon or lime rounds on top of the salmon before roasting. This enhances the citrus notes and keeps the fish moist.

  • For serving, sprinkle with chopped fresh dill or flat-leaf parsley to bring a burst of freshness and color to the dish.

  • For a mild kick, swap smoked paprika for a pinch of Turkish pul biber, which adds subtle heat and a hint of fruitiness.

For the Sauce:

  • 2 tbsp Dijon mustard

  • 1 tbsp honey

  • 1 tbsp lemon juice

  • 1 garlic clove, minced

  • 1 tsp paprika


Preparation:

Preheat your oven to 200°C/400°F/180°Fan

  • Toss the potatoes and onions with olive oil, salt, and pepper. Spread them on a sheet pan and roast for 15 minutes.

  • Prepare the sauce by whisking together Dijon mustard, honey, lemon juice, garlic, and paprika or pul biber if using.

  • Add the salmon and tomatoes to the sheet pan, drizzle with sauce, and roast for another 12-15 minutes until the salmon is flaky and cooked through.

  • Serve with a glass of crisp white wine and enjoy the easy elegance of this dish!


👩‍🍳 Chef’s Note: You can swap the paprika for a pinch of Turkish pul biber to add a mild, warm kick without overpowering the dish.
